Popcorn Shop Features Multiple Delicious Flavors

In June of 2016, Elizabeth Adamik’s passion for popcorn influenced her to open a unique business, Poppin’ Off Popcorn on Pearl Street in Knox.
“I have always loved popcorn, and wanted to bring something unique to the area,” Adamik says. “(My family) needed flexibility for our family life as well, so most of the time this has been a good fit.”
Before she opened Poppin’ Off Popcorn, Adamik worked in a few different fields.
“I worked in fast food as a teen, and then in ophthalmic tech,” Adamik says. “I also worked as an exterminator, and held licenses in Illinois and Indiana for pest control. Most recently, before opening the store, I was a stay-at-home mom for over 12 years.”
Adamik says Knox residents have been highly supportive of her business.
“We have a loyal following, and are always getting new customers each week,” she says. “Many come at the recommendation of our current customers, and that word-of-mouth advertising is very much appreciated. We are very grateful for the community’s support, and always try to give back.”
Some of Poppin’ Off Popcorn’s best-sellers are the standard flavors.
“Our homemade Carmel, Starke County Stir, Cheddar and Chicago Style Mix popcorns are big hits,” Adamik says. “Our Starke County Stir was a recommendation from a customer. She suggested we roll our Carmel in the Cheddar, instead of just mixing it with Cheddar. All flavors are made fresh at the store. We use anything from actual brownie mix to candy flavoring oils, to make unique flavors.”
Adamik has her own personal favorites.
“Chicago Mix is my standard, but I also enjoy most of the savory selections like Pepperoni Pizza, Chili Cheese and Dill Pickle,” she says.
Adamik and her staff create and change the popcorn flavors seasonally.
“We also do a flavor of the month to try flavors out,” she says. “We have Redskin Red Cream Soda, Blue Jay Banana Berry, Bobcat Banana Split, Cheddar Jalapeño, Sugar Cookie, Sea Salted Carmel, and Candied Jalapeño Cheddar, to name a few. We also have 12 flavors of Hershey’s hand-dipped ice cream, and we make hand-spun shakes, malts and floats. We also have all-beef Chicago dogs, and our signature Cowboy Beans.”
Adamik is appreciative of the Knox community.
“What we love the most about Knox is the small-town feel and community this town offers,” she says. “I have seen people pull together time and time again to help one another out. You don’t always get that everywhere you go. My husband Jeff and I moved our three kids, Alex, Savannah, and Zachary, here over 13 years ago. We have since added another son, Eli, a son-in-law, Eddie, and two granddaughters, Emmaline and Elaina, plus one more baby on the way. We love it here, and hope to make many more memories and friends.”
Adamik notes that Poppin’ Off Popcorn can cater events such as weddings, baby showers and more.
“We also have fundraising packages available, and can do pop-up events,” she says.
